Eric Rominger's Crémant d'Alsace Brut is a quality sparkling wine produced in the Alsace region of France. Its base is noble and consists of Pinot Noir and Pinot Blanc, in the majority, to which small parts of the Pinot Gris and Riesling varieties are added. All grapes are cultivated on clay soils with a limestone substrate. This particular soil composition gives the wines a distinctive minerality and balanced acidity. The vineyard, as always for this company, is cultivated with extreme respect for the environment, using only natural fertilisers and limited chemical products to combat vine diseases. The grapes are harvested manually, with a rigorous selection of intact berries that are immediately put into the pneumatic press. The fermentation process is natural and takes place with a period of several months on the fine lees, while the prise de mousse is followed by a period in the bottle, in contact with the yeasts, for at least 48 months. The result is a wine characterised by a fine and persistent bubble. The fruity nose is slightly reminiscent of brioche and gives way to a rich, vinous mouthfeel, characterised by fine acidity and a delicate persistence. An elegant sparkling wine with a fresh and lively character, it stands out in particular for its pleasant finesse. In terms of pairing, Eric Rominger's Crémant d'Alsace Brut is a versatile sparkling wine, perfect as an aperitif or to accompany the entire meal. Eric and Claudine Rominger's winery is based in Westhalten, Alsace, where they bought land in the late 1980s in an area that was then designated as undeveloped and therefore not favourable for viticulture. Against everyone's advice, however, they continued with the project and time proved them right. In 1992, in fact, these lands were recognised as Grand Cru, the highest wine classification in Alsace, and given the name 'Zinnkoepflé'. The winery's production focuses on the region's main grape varieties, Riesling and Gewurztraminer. In 2002, the winery was awarded both organic and biodynamic classification.
