Among the Burgundy appellations, Pouilly-Fuissé is perhaps one of the most interesting. Dedicated to the area's quintessential white grape, Chardonnay, this area always produces wines of great quality. Trilogie des Terroirs, proposed here by Closerie des Alisiers, is a fine example. Its peculiarity is that the grapes used for production do not come from a single area but are the result of a wise selection of 4 different villages in the area of Mâcon: Solutré-Pouilly, Fuissé, Vergisson, Chaintré. Harvested by hand at the end of October, this Burgundian white is aged only in steel, accentuating the most interesting notes of the original varietal. Light gold in colour, it has very clear aromas of white flowers on the nose which combine perfectly with hints of hazelnut and dried fruit. In the mouth it is very elegant, with a nice natural acidity balancing the richness of the fruit. Pleasant and mineral, it is the wine to offer throughout a meal. An excellent accompaniment for a spaghetti with seafood, it also goes well with more savoury dishes, including white meats.
