"Pruno Nero" Lambrusco Modena DOC

Pruno Nero is a Lambrusco Grasparossa di Castelvetro DOC. One of the many good red sparkling wines offered by Cleto Chiarli. It comes from a careful selection of the best grapes of the homonymous variety, processed with care and skill. It starts with a soft pressing followed by a prolonged maceration phase. For fermentation, on the other hand, selected yeasts are used to enhance the richness of the initial fruit. Then, at the end of this phase, the base wine is placed in steel autoclaves for the delicate frothing phase. This is a long process that requires careful control of the temperatures so as not to affect the freshness of the initial fruit. The result is a wine with an intense red colour and abundant foam. The nose is decidedly fruity, with intense notes directly reminiscent of freshly harvested grapes. In the mouth the contrast is intriguing. On the one hand a soft flavour, on the other a robust body. Above all, however, the classic vinous character that Lambrusco enthusiasts like so much stands out. As a wine of the region, this Grasparossa calls for a pairing with one of the many regional dishes. But it is also excellent with game or a good roast beef.
