    "Il Bosco" Amarone della Valpolicella DOCG Classico 2020
    • Every Amarone has its own story. The story of Il Bosco, by Cesari, tells of centuries-old oak trees that surround the estate and, in addition to giving the vineyard its name, help to create a unique microclimate, protecting the grapes and giving the wine unrivalled depth and complexity. We are in the heart of the Valpolicella Classica region. Here, the calcareous and clayey soil combines with ideal exposure to produce grapes of extraordinary quality. The blend of this Amarone is a tribute to tradition: 75% Corvina Veronese, which gives the wine structure, acidity and an unmistakable note of bitter cherry, Rondinella (20%) and a small percentage of Corvinone (5%), which adds colour and aromatic complexity. The selection of the grapes is clearly manual and carried out with meticulous care. After slow drying in the fruit cellar, slow fermentation at a controlled temperature extracts the best from each grape. This is followed by a long ageing process in oak barrels that lasts for at least 30 months, followed by further ageing in the bottle. In the glass, Il Bosco amazes with its intense, almost impenetrable ruby red colour with garnet reflections. The nose is a veritable explosion of aromas: ripe red fruit and jam, notes of plum and cherry in alcohol, intertwined with elegant hints of sweet spices, vanilla, tobacco, cocoa and a touch of liquorice. On the palate, it is warm, soft and enveloping, with a powerful structure and silky tannins that make it incredibly harmonious. The finish is very long and persistent. It has remarkable ageing potential and can evolve in the bottle for over 15 years. Thanks to its robust structure and alcohol content, it can acquire complexity and refinement over time, transforming the fruity scents into more evolved notes of leather and undergrowth. The ideal companion for important occasions, it pairs well with red meats, such as wild boar stew or sliced beef. It is also excellent with mature cheeses and, for an unforgettable finish, can even be paired with a piece of dark chocolate.

The one in Cavaion Veronese was designed and built taking into account the care that Valpolicella wines require, with a large space designed for the “resting” of red wines. In Fumane, on the other hand, the entire drying process, which lasts between 4 and 5 months, pressing and fermentation are concentrated, leading to the initial ageing of the wines.
