"Amaluna" Spumante Extra Dry - Due Palme

Amaluna is the first sparkling wine "made in Salento". A Charmat method created by Cantina Due Palme and obtained 100% from Negroamaro grapes. An interesting challenge that today can be safely considered won, thanks to the versatility of the typical vine par excellence. The name, Amaluna, celebrates the moon, that female generating principle, that mother to whom we rely, often evoked by farmers in their dreams and expectations. Harvesting begins at the end of August, so as to preserve the freshness of the fully ripe grapes. The vinification of the base wines is typically white, i.e. with immediate separation of the skins from the pulp. The wine thus obtained is ready to be placed in autoclaves for the low temperature sparkling phase. The result is a wine characterised by a beautiful bright straw-yellow colour which, as soon as it is poured, is covered by a beautiful white and creamy froth, well supported by a fine and delicate perlage. The nose is dominated by floral aromas, with characteristic fruity notes, particularly of white peach, banana and pineapple, kiwi and citron peel. In the mouth, however, it is soft and savoury at the same time. Full and balanced but above all pleasantly mineral. For a mouth-watering local pairing, the producer recommends Amaluna with some tasty battered courgette flowers, stuffed with anchovies, mozzarella and capers. A real treat.

Cantine Due Palme is today a symbol of excellence in Apulian winemaking. Founded in 1989, the winery was the brainchild of Angelo Maci, the current president and oenologist of the cooperative, with the aim of making quality wine from typical local grapes such as Negroamaro, Malvasia Nera, Primitivo and Susumaniello. In the vineyard, the traditional Apulian saplings are jealously guarded, allowing us to obtain grapes of exceptional quality, with complex and full-bodied fruit. In the winery, on the other hand, all stages of production, from vinification to ageing and bottling, are guaranteed by meticulous quality controls. The result is labels of great personality and drinkability, capable of conquering markets in over 40 countries around the world.
