The noble Coda di Volpe grape variety has origins that are lost in time. There are traces of it as far back as ancient Rome, where it was described as a grape particularly suited to the production of quality wines. Its curious name refers to the elongated shape of the bunch, which usually has two clearly visible wings, with small berries, often covered with bloom. Cantina di Solopaca offers it here in an interesting version, produced using the cryomaceration technique. After being brought to the winery, the grapes are cooled to preserve the most subtle and fresh aromas, and then gently pressed to extract only the best. The must obtained is decanted and undergoes a slow cold fermentation. In the glass, it has a beautiful straw yellow colour, with delicate aromas reminiscent of sweet exotic fruit and fresh flowers. On the palate, it is dry, harmonious, savoury and velvety. Excellent with appetisers and seafood first courses. It is also interesting paired with simple white pizza.
The Cantina di Solopaca, in the province of Benevento, is one of the oldest wineries in Campania. With around 120,000 hectolitres of wine produced, it is also one of the leading producers in the region. But these figures should not be intimidating. The varieties grown are Falanghina and Aglianico, typical of the Benevento area of Sannio, but also Greco and Fiano. In recent years, traditional grape varieties such as Coda di Volpe and Barbera have also been rediscovered. In total, the winery has around 1,300 hectares of vineyards in the municipality of Solopaca and 16 neighbouring municipalities.
