CHARACTERISTICS

  • Sensations A wine with an intense, bright red colour and a complex, structured aroma. The predominant perception of blackberries and wild berries in general, is complemented by delicate violet and ethereal balsamic notes. On the palate it is equally fruity and soft, rightly tannic, and suitable for accompanying succulent first courses, braised dishes, roast and stewed meats and medium-aged cheeses.
  • Vinification Before the harvest, the best bunches are selected for drying, which takes place either in boxes or on racks in the cellar. The grapes are then conventionally harvested. These are then subjected to a cold pre-fermentation maceration at a temperature of between 0 and 4°C, lasting 4 to 6 days depending on the grape variety. This is followed by a temperature-controlled alcoholic fermentation process at a maximum of 24°C, for 10 to 14 days, to allow the fruitiest components to express themselves to the full. A second 2/3-day alcoholic fermentation process begins at the end of the malolactic fermentation process, when the must obtained from the dried grapes is added to the part of the product that has already been fermented, usually in November. The addition of must is generally in the order of 3-10% and gives the wine overripe notes that blend in complete harmony with the fruity notes of the fresh wine.
