Among the vineyards of the Pfalz, where the sun warms a distinctive red sandstone that seems to store the energy of the day and release it to the vines during the night, the Pinot Noir Vom Buntsandstein from Weingut Pflüger is born – a red wine that breaks with the stereotype of the strict classic German style and instead embraces a lively, sun-filled drinkability. We are in Bad Dürkheim, in the heart of one of Germany’s most fascinating wine regions. Here the Pflüger family has been cultivating the land since the distant 17th century. This wine belongs to the Qualitätswein category of the Pfalz, a designation that guarantees high quality standards. The grape used is pure Pinot Noir, locally known as Spätburgunder, which in this corner of Germany has found an ideal second home. The grapes are grown following the rhythms of nature, without the use of pesticides or synthetic fertilisers. In the cellar the approach is purist: fermentation takes place spontaneously in stainless steel to preserve the integrity of the fruit. Ageing also continues in stainless steel tanks, a deliberate choice to prevent oak from masking the delicate varietal nuances and the mineral notes given by the sandstone soils. The result is a young, vibrant and incredibly clean red. Bright, transparent ruby red in colour, the nose bursts with small red fruits: wild strawberries, raspberry and a crunchy cherry that immediately invites tasting. With a little oxygenation, subtle hints of forest floor and a touch of sweet toasted spices emerge, despite the absence of oak. On the palate it is wonderfully smooth and flowing, with a citrus-like freshness that makes every sip dynamic. The tannins are silky, almost imperceptible, and it finishes with a clean close recalling the minerality of the soil. An extremely versatile wine, perfect with charcuterie and cheese boards or dishes based on delicate meats. It is also excellent with grilled fatty fish such as salmon or tuna, served slightly chilled at about 14–16°C.

When the concept of “organic” was still far from the radar of the global market, Bernd Pflüger had a courageous intuition: to abandon chemicals and return to a form of agriculture that respects natural cycles. This pioneering vision was embraced and taken a step further by his son Alexander, who in 2008 converted the entire estate to biodynamics, obtaining the prestigious Demeter certification. For Alexander, biodynamics is not a trend but a “choice of freedom”. It means regenerating the soil, encouraging biodiversity and allowing every plant to find its own balance. Not bare soils, but a vibrant ecosystem of herbs, flowers and insects, protected by the characteristic dry-stone walls of red sandstone that absorb the heat of the day and release it during the night. If the work in the vineyard is meticulous, in the cellar the key word is “minimalism”. Alexander intervenes as little as possible: spontaneous fermentations with native yeasts, no aggressive fining and a skilful use of wood so the wine can breathe and mature in its own time. The result is wines “of character, depth and homeland”, not crafted to immediately please the palate with artificial aromas, but to move those who seek authenticity.
