  • Sensations Colour: ruby red with slightly orangey purple reflections. Nose: fruity, with hints of fresh flowers, rose petals, berries and floral aromas. Taste: harmonious, enveloping, slightly tannic, medium-bodied with hints of pepper and almond aromas on the finish.
  • Vinification After destemming-crushing of the grapes, the must is transferred to special temperature-controlled vinifiers. Alcoholic fermentation with maceration lasts about 5 days at a constant temperature of about 22°C in order to best extract the characteristic aromas of the vine. During maceration, automatic pumping over is carried out periodically in order to extract the polyphenolic substances present inside the skin. At the end of alcoholic fermentation, malolactic fermentation starts immediately in stainless steel tanks at a temperature of 18°C. After the necessary racking required to obtain the right degree of clarification, the wine is left to rest in steel tanks for about seven months until it is bottled. Before release, it is refined for three more months in the bottle.

    "Rebus" Ruchè di Castagnole Monferrato DOCG 2023
  • Less well known than its famous brothers in the territory, Ruché is an indigenous grape variety of Monferrato. Its origins are shrouded in mystery. Recent studies, however, have shown that its DNA is distantly derived from two typical northern Italian grape varieties: Croatina and the now-disappeared aromatic Malvasia di Parma. An intricate "rebus", then, which is precisely the name chosen by Vinchio Vaglio for this Ruché di Castagnole Monferrato DOCG. What is certain, however, is that the Ruché grape grows well on dry, calcareous soil, within a restricted area of Basso Monferrato that includes seven municipalities, of which Castagnole Monferrato is the most important. Harvested strictly by hand from the third decade of September, after destemming-crushing, the must is sent to alcoholic fermentation at a controlled temperature. Then, after racking, the wine undergoes malolactic fermentation and a period of refinement in steel tanks for about seven months before bottling. Ruby red in colour with violet hues that may turn to orange over time, this red has aromas of fresh fruit and flowers. From rose petals to wild berries. In the mouth it is harmonious, enveloping, slightly tannic. Medium-bodied with a strong character, it has notes of pepper and almond aromas on the finish.

    In 1959, the year it was founded, there were only 19. Today, in 2021, there are 192 members of the Cantina Cooperativa Vinchio e Vaglio Serra. In total they manage with care and passion about 450 hectares of vineyards. In particular Barbera, the so-called "Rubino di Vinchio", but also other typical local vines, such as Dolcetto, Cortese, Grignolino, Nebbiolo, Brachetto, Moscato, Freisa and Bonarda. To this dense group of autochthonous vines, i.e. typical of the area, we can also add the international vines that are best suited to the hills of Piedmont, such as Pinot Noir, Chardonnay, Sauvignon and Viognier. The vineyards, most of which are on very steep slopes, make the work particularly demanding but, at the same time, guarantee optimal exposures that result in perfect ripening. The quality of the harvested grapes is, of course, also influenced by the nature of the soil, whose mineral components guarantee the production of high quality wines. The winery, on the other hand, is equipped with state-of-the-art equipment and modern winemaking facilities, and also has a large barrique cellar, built into the hillside, which guarantees constant and natural temperature and humidity. Here there are French oak barriques and barrels of various capacities, where the wines can age slowly. For as long as necessary.
