    Spumante "Paradise" Special Edition Rosé Brut
  • The bottle certainly doesn't go unnoticed. It is reminiscent in some ways of a famous Champagne Maison, but with more colour and decidedly Italian taste. The design of the bottle is entirely handmade by the New York designer Ceci Johnson, using the watercolour technique, then digitised by scanner and applied to the bottle. Inside, then, one discovers a unique sparkling wine, the result of a fortunate encounter between Veneto and Sicily. The starting grapes, sourced from low hillside vineyards, between 100 and 300 metres above sea level, are typical selected white varieties, Glera, to which is added a part of Sicilian Nerello Mascalese, used to give colour and character. Vinified in pink, the red grapes are simply pressed and the must is separated almost immediately from the skins, without even starting a first phase of maceration. The base wine thus obtained is then placed in autoclaves for the second fermentation, which lasts about 4 months. In the glass it reveals a delicate antique pink colour, thanks to the special processing of the grapes in the press. The nose is intensely fruity, with pleasant notes of fresh flowers and forest fruits. In the mouth it is warm, lively and at the same time pleasantly soft. Ideal as an aperitif, this unconventional sparkling wine is excellent with fish and shellfish menus and even with delicate meat dishes. Try it also with pizza.

    The history of Valdo is closely linked to that of the Bolla family, made up of passion and entrepreneurial spirit. A history that coincides to a large extent with that of the evolution of Prosecco and the development of the splendid territory where it is produced. It all started with an intuition of Abele, grandfather of Valdo's founder, Sergio Bolla. It was 1883 and Abele, then owner of an inn, which still exists in Soave, decided to start producing still wines to supply the best establishments in Venice and Milan. It was such a great success that in 1926 a group of enterprising entrepreneurs from Valdobbiadene decided to join forces, creating the "Società Anonima Vini Superiori", a company mainly dedicated to making Valdobbiadene Prosecco Superiore and Cartizze sparkling wine. In 1938, Sergio Bolla, Albano's son, acquired the Società Anonima Vini Superiori, which thus became the property of the Bolla family. From then on, its history was studded with success and satisfaction. In 1941, the company changed its name to Valdo. In 2002 the new production centre was inaugurated and shortly afterwards the company expanded outside Italy, creating two sister companies, one in Germany and one in the United States. Today Valdo is a colossus, in the best sense of the word. A company capable of producing excellent wines, carrying the good name of Made in Italy throughout the world.
