On the palate, the freshness and minerality of Pinot Noir and the body and persistence of Chardonnay stand out, combining in the refined and intriguing final character of this mountain AlpeRegis.
    • Vinification AlpeRegis Rosé is the result of a careful selection of the best Pinot Noir and Chardonnay grapes grown exclusively in our vineyards, in the hilly and sunniest areas north of Trento. During the month of September, the grapes are harvested and selected by hand, destemmed, crushed and gently pressed. The must then undergoes initial fermentation with the addition of selected yeasts. The wine is then bottled and undergoes a slow refermentation in the bottle. This is followed by a long period of maturation on the lees, during which AlpeRegis develops its character, giving rise to numerous small bubbles and fragrant, complex and persistent aromas. After disgorging and the addition of the liqueur d'expedition, AlpeRegis Rosé is ready to be enjoyed in all its rich and elegant complexity.

    • Trentino is famous for its Metodo Classico wines because they combine the strength of the mountains with the international elegance of its grapes. And when you add Pinot Noir to this mix, you get something truly special, such as Cantina Rotari's Trentodoc Rosé Brut AlpeRegis. But let's proceed in order. This Rosé is not produced just anywhere, but on the hills surrounding the Adige Valley north of Trento, where the vineyards enjoy perfect soil and climate conditions. A significant altitude, mineral soils and a beneficial alpine temperature range, with warm days that allow the grapes to ripen and cool nights that preserve their acidity and aromas. Trentodoc Millesimato, the cuvée is a skilful blend of Pinot Noir and Chardonnay. The former is the real star of this rosé, present in a significant percentage, around 80-90%. Pinot Noir provides structure, typical colour and hints of small red fruits. Chardonnay, on the other hand, adds elegance, roundness and that aromatic persistence that envelops the palate. The grapes are harvested by hand in the most suitable hilly areas to ensure that only the best bunches are used for this label. The real distinctive feature of this Metodo Classico is the ageing: a minimum of 36 months on the lees. This period, well beyond the minimum required by the regulations, allows the wine to develop remarkable aromatic complexity and an extraordinarily fine perlage. Pale and elegant pink in colour, with delicate coppery reflections, the bubbles are dense, continuous and incredibly persistent. The nose is intense and fragrant. The aromas are dominated by the red berries typical of Pinot Noir, such as raspberry and cherry, which blend with more mature notes of dried fruit and the classic hints of yeast and biscuit due to the long ageing process. An enveloping and never banal bouquet. In the mouth, it is an explosion of freshness and flavour, a perfect dialogue between the minerality of Pinot Noir and the body of Chardonnay. Dry, balanced and pleasantly structured. The finish is long and persistent, leaving a clean sensation in the mouth that immediately invites the next sip.
