In the heart of Montello, among the hills of the province of Treviso, Serafini & Vidotto has rediscovered and promoted an almost forgotten native grape variety: Recantina. But let's start from the beginning. Montello and Colli Asolani are characterised by clayey and calcareous soils, ideal for viticulture. Recantina is the daughter of this corner of Italy, cultivated since ancient times but almost disappeared with the arrival of phylloxera in the early 20th century. Thanks to the recovery efforts of a few producers, including Serafini & Vidotto, it has been reintroduced and today represents a unique wine heritage. The harvest takes place in mid-October and, after traditional vinification, the wine is aged in steel for at least 6 months before being released 8-10 months after harvest. It has a bright ruby red colour. The bouquet is exuberant and fruity, with notes of black cherries, ripe raspberries and blueberries, accompanied by floral hints of violet and spices such as white pepper and liquorice. The palate is almost perfect, with a juicy drinkability and well-integrated tannins, typical of the grape variety. Already good today, this wine can evolve well for a few years, developing aromatic complexity. Excellent with cold cuts, red meats such as Florentine steak, duck breast with aromatic herbs, roast guinea fowl, lamb chops “scottadito” style and not too mature cow's milk cheeses.
Serafini & Vidotto is a winery in Nervesa della Battaglia, in the heart of Montello, in the province of Treviso. It was founded in 1986 by Francesco Serafini and Antonello Vidotto, two friends united by a passion for wine and the land. The winery is now established as one of the most significant producers in the Montello-Colli Asolani DOC appellation. The Montello area, characterised by rolling hills and iron-rich clay soils, offers ideal conditions for viticulture. The proximity to the Piave River and the protection of the Alps create a microclimate favourable to the cultivation of grape varieties such as Cabernet Sauvignon, Merlot, Cabernet Franc, Recantina, Manzoni and, of course, the ever-present Glera. Today, the winery has around 25 hectares of vineyards, divided into several plots, each with its own unique characteristics. Among these, the “Colmel” vineyard is located on the highest hill in the village, while “Da Baracca” is located near the chapel dedicated to the aviator Francesco Baracca, a hero of the First World War. The winery has adopted sustainable agricultural practices from the outset, avoiding the use of chemical herbicides and promoting biodiversity through the planting of hedges and woods. Since 2019, Serafini & Vidotto has been certified “Biodiversity Friend”, demonstrating its commitment to environmentally friendly agriculture.
