The vines are planted on calcareous and gravelly soils that warm up during the day but are cooled at night by breezes coming down from the mountains. Pinot Bianco has an eclectic personality: it is a chameleon that adapts to its environment and, in South Tyrol, brings out all its mineral and vibrant soul, without losing the innate roundness that makes it so fascinating. The grapes are harvested by hand from high-altitude vineyards and immediately pressed gently. Fermentation takes place partly in large oak barrels and partly in steel. The ageing process, which lasts a full 12 months, takes place half in barriques and half in large oak barrels, before concluding in steel. This long rest allows it to develop a complex structure and evolutionary potential that can be felt with every sip. Straw yellow in colour with greenish reflections, the nose reveals a seductive and layered bouquet. Notes of green apple and pear blend with hints of yellow-fleshed fruit, such as pineapple, and delicate nuances of toasted almond and vanilla, the result of its time in wood. The palate is enveloped by a vibrant freshness and persistent sapidity. A rich and enveloping white wine, it has a full body that balances well with lively acidity. The finish is long and mineral.
