    • Sensations Ruby red in colour, which turns towards garnet during ageing. Soft, savoury, slightly warm and velvety on the palate with a pleasant, typical bitter finish. The aromas are reminiscent of wild strawberries, roses and wilted violets, with notes of liquorice and aromatic herbs appearing during ageing.
    • Vinification VINIFICATION: the grapes are harvested by hand and delivered by the members in the hours immediately following the harvest. They are gently pressed upon arrival at the winery, where they are carefully selected. Fermentation takes place at a controlled temperature (30°C) in stainless steel tanks and is carried out using selected yeasts. During maceration (6-8 days), which is longer than for the classic version, the must-wine is monitored through chemical and organoleptic analyses and operations (pumping over and delestage) are carried out on the fermenting mass to optimise the extraction of colour and body. Ageing and malolactic fermentation in tonneaux. The wine is bottled only when it is considered ready. It cannot be released for sale before 1 November following the harvest.
