When Diego Pressenda decided to bottle his most precious Barolo, he chose to dedicate it to Adelchi, the uncle who first cultivated these vineyards with old-fashioned dedication and care. We are in Monforte d'Alba, in the charming hamlet of Sant’Anna, a place where the hills seem to stretch endlessly towards the horizon. The soil here is remarkable, composed of the famous Sant’Agata Fossili marls, a blend of clay, sand and limestone that forces the vine roots to dig deep in search of nourishment. The vineyards reach almost 500 metres above sea level and benefit from constant ventilation coming directly from the Ligurian Sea. This microclimate protects the grapes from humidity and provides ideal temperature variations, perfect for developing complex aromas and impressive structure. As expected, the wine is made from 100% Nebbiolo, which in this particular terroir expresses a unique combination of power and grace, transforming the severity of the soil into timeless elegance. The grapes are harvested entirely by hand and selected with meticulous care. In the cellar, a traditional skin maceration lasting around 15 days helps extract colour and the dense tannic structure. The crucial stage, however, is ageing. The wine rests for a full 30 months in large French oak casks. This choice allows it to mature slowly and gently without the oak overpowering the original fruit character. In the glass it displays a splendid, luminous garnet-red colour that gradually develops fascinating orange reflections with age. On the nose it is surprising and distinctive. Fresh and expressive fruit notes recall melon and watermelon, enriched by sweet hints of coffee and delicate spices such as cinnamon and aniseed. On the palate it is full, complex and sophisticated. The tannins are clearly present but wrapped in generous fruit flavours that make the wine velvety and deep, leading to an exceptionally elegant finish. This wine has outstanding ageing potential and can comfortably rest in the cellar for 15 to 20 years. At the table it calls for rich and elaborate dishes.
