We are on soils that experts define as Tortonian, characterised by bluish marls and sands that give Nebbiolo a unique softness. The undisputed protagonist, as always, is Nebbiolo vinified in purity. An aristocratic and demanding grape variety, it finds its natural habitat here. The Revello family succeeds in taming its natural angularity while enhancing the purity of the fruit, transforming a difficult grape into a wine that flows effortlessly in the glass. The grapes ferment and macerate in vertical fermenters for around three weeks, enough time to extract all the character from the skins. Afterwards, malolactic fermentation takes place in stainless steel to preserve aromatic clarity. For ageing, a skilful combination of second- and third-passage barriques together with large 15- or 25-hectolitre casks is used. This process lasts 24 months and serves to “polish” the wine without ever allowing the oak to overshadow its original identity. In the glass, it reveals a transparent ruby-red colour with garnet reflections. On the nose, ripe cherry intertwines with floral notes of freshly picked violet. Earthy hints recalling woodland undergrowth also emerge, typical of the great crus of the Langhe. On the palate, the surprise lies in the tannin texture, described as silky for good reason. The structure is substantial, yet the wine remains agile and flowing, with a harmonious finish that immediately invites another sip. Already delicious today, this Barolo can rest in the cellar for 10 to 15 years. Its structure allows it to evolve magnificently, transforming notes of fresh fruit into more complex hints of leather and liquorice. In 2016, the brothers chose to part ways in order to allow their respective children to join the business. The heart of the production lies in the Annunziata area, a hamlet of La Morra renowned for producing Barolos of almost unmatched elegance. The production philosophy is rooted in sustainable viticulture: the use of herbicides and insecticides has long been abandoned, favouring targeted treatments based on sulphur and copper in order to respect the natural balance of the soil.
