Of the Colli Tortonesi, Timorasso is becoming one of the most representative wines. A white wine with great character, these interesting wines have the ability to age well, acquiring truly unique nuances over time. 100% Timorasso grape, in the intentions of the winemaker this Derthona "Cà Degli Olmi" represents the best expression of this indigenous variety. It comes from grapes harvested by hand in the most suitable areas from plants with an average age of about 20 years. In the cellar the processing is simple but accurate and culminates with a period of refinement of about a year, on its fine lees, at controlled temperature, in steel tanks. Thus we discover a wine characterised by a beautiful straw yellow colour, with intense aromas and a pleasantly mineral and savoury taste. A white wine of great structure, it does not fear the passage of time. If well stored in the cellar, in fact, it is capable of evolving for years, waiting to be uncorked when the menu is the right one. Perfect, for example, with a tasty risotto alla parmigiana or an unusual onion soup.
