LeVide’s Trentodoc Extra Brut Cime di Altilia is a concentration of mountain energy captured in a sparkling wine that refuses to compromise. We are in Predaia, in an area of Trentino where nature still dictates the rules of the game. Cantina LeVide, founded in 2015, takes its name from the local dialect word meaning simply “the vines”, a direct tribute to the undisputed protagonists of the landscape. The vineyards climb along the left bank of the Adige River, challenging steep slopes and altitudes reaching 500 metres. Here the soil is made of dolomite, that pale and ancient rock which gives the wines an almost electric salinity. Completing the perfect picture is the Ora del Garda, an afternoon breeze that cleans the air and keeps the grapes healthy, creating an enviable microclimate for high-altitude viticulture. For this Cime di Altilia, the choice was made to focus entirely on Chardonnay vinified in purity. Among the vineyards of Predaia, this grape variety reaches its highest expression of elegance and verticality. Here Chardonnay does not seek easy softness or excessive richness. On the contrary, the aim is to preserve a strong acidic backbone that will become the wine’s structural pillar during its long years of ageing in the cellar. Cime di Altilia rests on its lees for at least 36 months — three long years spent in the darkness and coolness underground. This prolonged contact transforms the aromatic profile, enriching it with complex nuances without masking the grape’s original freshness. As an Extra Brut, the dosage is minimal, a choice designed to expose the vibrant character of the terroir. On the nose, elegance is the key word. Clear notes of crisp apple and a delicious hint of almond, followed by a whisper of fine pastry. On the palate it is straight as an arrow. The sip is dry, precise and deeply fresh. Here, dolomite and limestone soils dominate, giving the grapes salinity and vibrant freshness. But the real secret lies in the microclimate. The vineyards benefit from the influence of the Ora del Garda, a mild wind rising from Lake Garda that moderates temperatures and keeps the bunches dry and healthy. Entering the world of LeVide means embracing the philosophy of “patient waiting”. There is no rush here: the wines rest on their lees for long periods, often well beyond 36 months, allowing the bubbles to become fine, persistent and velvety. Every bottle is vintage-dated, a liquid expression of a single harvest, because the goal is not to standardise flavour but to highlight the nuances that each season gives to the land.
