  • Vinification Etna DOC “Re Befè” is a classic method sparkling wine made from only Nerello Mascalese grapes selected from those with the greatest territorial vocation. Harvesting takes place at dawn and strictly by hand to ensure a greater selection of grapes that undergo a specific pressing cycle. The wine remains in steel on the noble lees (sur lies) for a minimum of 4 months, re-fermentation takes place in the bottle, in a temperature-controlled room for 1-2 months. Re Befè ages in the bottle on the lees for 36 months and 6 months after disgorgement.

  • The quality bubbly you don't expect. This is the Etna DOC Re Befè, Metodo Classico Extra Brut, proposed here by Al-Cantàra. An interesting expression of Etna viticulture, a unique and fascinating territory capable of giving its wines a unique and well recognizable personality. But let us proceed in order. This sparkling wine is born on the northern slopes of Etna, precisely in Randazzo, in the province of Catania. Here the vineyards reach 620 meters above sea level, sinking their roots into an ancient soil of volcanic origin, rich in minerals. The cultivation of vines in these extreme conditions, with large temperature ranges between day and night, favors the concentration of aromas in the grapes and a natural acidity that gives freshness and longevity to the wines. Re Befè is made from pure Nerello Mascalese. This an indigenous variety of Etna, it is especially loved for its ability to give rise to elegant wines. Red wines, for the most part, but also quality sparkling wines, pure expression of their terroir. Re-fermentation in the bottle and long aging on the lees result in a complex and refined sparkling wine. Grapes are harvested manually at dawn to preserve the freshness of the clusters. The bases are left in contact with their noble lees for at least 4 months. While the maturation in the bottle extends for a full 36 months, developing a beautiful aromatic complexity. After disgorgement, then, the Re Befè ages further for 6 months in bottle before being marketed. Bright yellow in color, the nose surprises with a beautiful rich and complex bouquet. Mineral notes of lava stone, black ash and incense mingle with citrus aromas of cedar, kiwi and orange peel. This is followed by aromas of fresh fruit, such as green apple, and a floral bouquet of broom and lemon leaves, enhanced by mountain herbs and light nuances of fresh almonds. In the mouth, however, this sparkling wine stands out for its elegance and creamy bubbles. The freshness is vibrant and the finish pleasantly mineral. Good right from the start, this Etna bubble, thanks to its structure and acidity, is capable of evolving even for 8-10 years in the bottle, developing further complexity and aromatic depth. Perfect to accompany a refined aperitif, it is also ideal to be enjoyed throughout a meal, with fish, shellfish and seafood dishes, as well as white meats, fresh cheeses and vegetarian dishes with a delicate taste.

    Al-Cantàra was born from the happy insight that a good wine is “poetry” and it takes “art” to make it - as stated on the winery's website. It is no coincidence that all the wines produced have names of poems by Sicilian authors, and the labels take up the works of two young painters from Catania. We are in the heart of Sicily. In a corner of paradise located exactly in contrada Feudo S. Anastasia in the municipality of Randazzo, 620 meters above sea level. The summit of Mount Etna, not far away, watches over the vineyards and winery from above. The name Al-Cantàra comes from the river that flows at the foot of the volcano. Although young, the winery was officially opened in 2005, it has already established itself nationally and internationally thanks to the high quality of its wines, which have won awards from food and wine critics. Today the winery can count a total of 20 hectares of land, of which about 15 hectares are planted with vines. And among them about 4 are historical, over 60 years old, with 1,000 prephylloxera vines. Total production, mostly under the DOC Etna umbrella, is about 100 thousand bottles a year. Once again tradition and innovation go hand in hand under Sicily's blue sky.
