The Valle dei Laghi, in the heart of the Brenta Dolomites, not far from Lake Garda, is an area that enjoys an ideal microclimate for viticulture. Characterised by mild temperatures and the constant presence of winds that give freshness to the vineyards. The soils here are of fluvio-glacial origin, rich in limestone and gravel. All elements that contribute to making Chardonnay the true protagonist of this valley. And Chardonnay is also the star of this organic sparkling wine proposed by Cantina Toblino. Trento DOC Vent Extra Brut Millesimato is the product of a manual harvest that takes place between late August and early September, when the grapes reach the perfect balance between ripeness and acidity. A classic method, after the first vinification of the bases, the wine is bottled for the second fermentation, followed by refinement in contact with the yeasts for about 36 months. This is followed by disgorgement and a slight dosage that keeps the wine's freshness and elegance intact. In the glass, Vent Extra Brut has an intense straw yellow colour with golden highlights and a fine, persistent perlage. On the nose, one discovers a complex and refined bouquet, where the citrus notes of ripe citron and orange peel blend with those of crisp rennet apple, bread crust, almonds and a slight hint of spice. In the mouth, it surprises with its perfect balance of fruity, spicy and almondy hints. The freshness and long taste persistence recall the breezes of the Valle dei Laghi, providing a refined and memorable tasting experience. Thanks to its long maturation on yeasts, this Trento DOC has a good capacity for ageing, retaining freshness and complexity for 5-7 years after disgorgement. An extremely versatile wine, it is perfect as an aperitif. On the table, it accompanies light starters of fish from the lake, shellfish and mature cheeses.
