    Champagne Lamiable "Souffle D'Étoiles" Extra Brut Grand Cru
  • For fans of lightly-dosed, i.e. very dry Champagnes, this is a label not to be missed. Champagne Extra Brut Souffle d'Etoiles, Grand Cru proposed by Maison Lamiable guarantees a perfect balance between fruity pleasantness and mineral freshness. Thanks to the perfect blend of Pinot Noir and Chardonnay, both from villages ranked among the best in the region, and the slow ageing process. The latter, in particular, gives the wine an elegant evolution and pleasant complexity. Pinot Noir and Chardonnay are vinified separately, in temperature-controlled stainless steel tanks. A rich percentage of reserve wines also contributes to the creation of the final cuvée, amounting to approximately 40% of the total. The second fermentation, in the bottle according to the Champenoise method, continues for about 30 months. Straw yellow with golden hues, the nose is elegant and articulate, with notes of red fruits and ripe figs. In the mouth, however, it is pleasantly creamy and full. Soft but above all extremely mineral, thanks to the low dosage, and particularly long. Because of its refreshing character, this Champagne lends itself to being served both as an aperitif and throughout the meal. Excellent with raw fish and shellfish.

    The first traces of the Lamiable family in the Tours-sur-Marne area date back to the 18th century. The current estate, however, was only founded in 1859 by Louis-Hippolyte. And the real breakthrough came only after the Second World War, when, in the early 1950s, Pierre Lamiable planted the first vines and thus founded the company. At the same time, with the help of his brother Auguste, the underground cellars were literally dug with an ice axe. The beginning of the marketing of Champagne only began in 1970. Today, the Maison Lamiable property extends over about 6 hectares, all within the Montagne de Reims region. In the countryside, Pinot Noir dominates, with 30% Chardonnay. The vineyards are managed in a sustainable manner, with 'Viticulture Durable e Haute Valeur Environnementale' certified agriculture, i.e. with agronomic principles with a low environmental impact.
