Jento is a lively white wine, Puglia IGP, offered here by the fine Taranto-based winery Giustini. Jento... or rather the 'wind', stirs, shakes, moves and without discrimination touches everything in its path. So does this lively white wine, the result of processing Malvasia grapes. But let us proceed with order. The grapes, harvested in the last ten days of September, after having had plenty of time to enrich their aromas and fragrances, are soon brought to the cellar to be processed with care and in full respect of their delicate natural aromaticity. At the end of the first fermentation, the wine undergoes a second, natural fermentation in steel tanks, where it acquires its slight sparkling vein. This is followed by a period of refinement, again in steel, before bottling. In the glass one discovers a pleasantly young wine, characterised by a straw-yellow colour with greenish highlights. On the nose, the notes that can be perceived are the fragrant ones typical of Malvasia. A delicate bouquet that reaches the nose thanks also to the delicate vivacity of the wine. In the mouth, however, one discovers a fresh and harmonious wine, characterised by a soft and long finish. It is the right wine to uncork to make every aperitif more enjoyable. Also excellent with cold starters, delicate first courses and especially fish soups.
Wine: a family affair. At least for the Papadopoli family, Apulian producers who are justifiably proud of their origins. The winery is located in a middle land, between the sea of Taranto and the heights of the Valle d'Itria. Here is San Giorgio, a small town that falls within the Primitivo di Manduria DOC area. And it is here, for no less than four generations, that the family has handed down traditions, experience and passion for wine from father to son. The seed was planted in 1991 when Giuseppe Papadopoli, after spending years managing the vineyards of some of the most productive companies in the area, felt that the Apulian wine market was changing. Thus the first hectares were purchased, marking a turning point. The name chosen is that of the district of the first vineyards, Giustini precisely. From then on, from label to label, from success to success, the activity of the fine Taranto company has never come to a halt. And the good wines on offer today are there to prove it.
