A big territory. An extraordinary vine. Centuries of tradition and one great goal. To give life to a wine with personality and the right consistency to accompany the tasty dishes of Tuscan cuisine. These are the basic ingredients of this interesting Chianti Classico Riserva DOCG, proposed by Fattoria dell'Aiola. Sangiovese 90%, with Colorino and Merlot, this wine undergoes a long processing that begins with a phase of maceration of the skins that can last up to three weeks. In the meantime the wine is kept at a constant temperature of 28 C, in steel tanks with frequent pumping over. After racking, the wine is passed into wood, large barrels that will house it for at least two years. This is necessary for the slow refinement to come to an end and for the wine to be ready for the last stage of processing. Another six months, minimum, of waiting in the bottle. Only then is the Chianti Classico Riserva ready to face the market. Of great and noble structure, this red wine shows spicy notes deriving from the long aging in barrels. An austere wine, it evolves over time. That's why there's no hurry to uncork it. Properly stored in the cellar, it will know how to give great satisfaction for many years to come.

Sangiovese dominates over everything, although there are also small plots of other international varieties. From the manual harvest, to the resting in traditional large wooden barrels, the wine of the farm is produced with artisan care.
