  • Sensations Distinguished by a strong identity, Caparbio reinforces the peculiarities of the two blends that compose it, offering an unusual tasting experience. Initially, the minerality and pungency typical of Grechetto impose themselves on the senses. As the wine oxidises in the glass, the aromaticity, body and persistence of the Malvasia gradually emerge, finally prevailing with notes of almond and honey.
  • Vinification The must is fermented in steel tanks at a controlled temperature of 18°C. This temperature is then gradually lowered as alcoholic fermentation is completed, until the optimum temperature for the specific variety is reached. This is followed by a period of refinement on noble lees for about 40 days to enhance the complexity and improve the longevity of the wine. This also preserves the wine from possible oxidation during racking, minimising the need to add sulphites. Clarification follows exclusively with bentonite at an extremely low dosage to preserve aromas and colour. The subsequent filtration is carried out with a tangential filter.

    "Caparbio" Lazio Bianco IGT 2022
  • Caparbio, meaning persistent and tenacious, pursuing its ideas with resilience. This interesting white wine from Lazio is the result of successful experimentation in the cellar. Caparbio, in fact, comes from an unusual blend of Grechetto and Malvasia Puntinata grapes in equal parts. Distinguished by a strong identity, Caparbio reinforces the peculiarities of the two grape varieties that compose it. Minerality and pungency, aromaticity and persistence alternate in a fascinating game of oxidation in the glass. Straw yellow in colour with greenish reflections and golden streaks, what is most striking about this wine is its marked minerality and pungency, typical of Grechetto. With time the aromaticity, body and persistence of Malvasia emerge and finally prevail, with notes of almond and honey. It is best paired with the most classic of regional dishes: cacio e pepe. This white wine, however, is also an excellent accompaniment to savoury meat dishes such as pork loin.

    Chiara and Lorenzo Iacoponi are two siblings who grew up with bread and... "Castelli Romani". To be precise, they grew up in Monte Compatri among the hills, on the slopes of the Latium volcano, where their grandfather passed on to them a passion for nature and the vineyard. And it was here, in 2017, that they set up a winery, Cantine Eredi dei Papi, with the aim of producing top quality wines "made in Lazio". To do so, they base their activity on a simple golden rule: "wine is made in the vineyard". For this reason, from the very first years of activity, the two brothers have implemented a strict conversion of the vineyards from spurred cordon to guyot, with native vines planted over 20 years ago by their grandfather. The concept of terroir is a prerogative inseparable from the identity of the company, which, aware of the potential of the Lazio region, aims to become its ambassador on a national and international level.
