Burgundy also has its small exceptions. And among the most interesting is that of AOC Bouzeron, which covers the municipality of the same name and neighboring Chassey-le-Camp. We are in the heart of the Côte Chalonnaise of Burgundy. The particularity of the Bouzeron AOC lies in the fact that, although it is located in the cradle of Chardonnay, it provides for the use of Aligoté, and is in fact the only appellation at the city level with this particularity. Immediately after harvest, the grapes are pressed into whole bunches in a pneumatic press. The must, after being decanted for 24 hours is fermented at a controlled temperature. Then the wine is aged on its fine lees, in stainless steel tanks, for about 10 months. Bright yellow in color, this wine reveals citrus and mineral aromas. In the mouth, on the other hand, it surprises with the perfect balance between ripe fruit notes and fresher ones due to the natural acidity of the grape variety.
