Eric Rominger's Muscat is a quality white wine made from 100% of the Muscat Ottonel variety. This white grape native to Alsace is also cultivated in many other wine regions of the world, including Italy, although only in its land of origin does it reach very high quality levels. Its characteristics are an intense aromaticity and a balanced acidity, which gives the wine freshness and liveliness. Eric Rominger's vineyard is cultivated with particular respect for the environment, under biodynamic agriculture, without using chemicals. The grapes are harvested manually, with careful selection of the best grapes, which are then fed into the pneumatic press. Pressing is long and slow, to favour pellicular maceration. Fermentation is spontaneous, with the wine then resting on fine yeasts for several months. Eric Rominger's Muscat presents itself in the glass with a beautiful straw-yellow colour. The nose is explosive and typical, with hints of acacia flowers, white peach and bergamot. In the mouth, on the other hand, it is dry and elegant, characterised by a lovely fatness and delicate vivacity at the same time. Of rare aromatic finesse, thanks to its saline minerality, it is extremely pleasant and perfect with vegetarian and legume dishes. In the Alsatian tradition, it is also paired with asparagus.
Eric and Claudine Rominger's wine cellar is based in Westhalten, Alsace, where they bought land in the late 1980s in an area that was at the time designated as undeveloped and therefore not favourable for viticulture. Against everyone's advice, however, they continued with the project and time proved them right. In 1992, in fact, these lands were recognised as Grand Cru, the highest wine classification in Alsace, and given the name 'Zinnkoepflé'. The winery's production focuses on the region's main grape varieties, Riesling and Gewurztraminer. In 2002, the winery was awarded both organic and biodynamic classification.
