Casali Maniago offers this 100% Ribolla Gialla from the hilly areas of the Sottomonte Estate in the municipality of Buttrio, in the province of Udine. Here the predominantly marly and clayey soil structure allows the grapes to reach perfect ripeness. Vinification, traditionally white, involves a temperature-controlled fermentation phase to encourage the development of primary aromas. At the end of the transformation, the wine matures in stainless steel tanks, remaining 'sur lies' until bottling. Then, once bottled, the wine rests in the cellar for a few months before final release. Straw yellow in colour, the nose reveals fine and pleasant, fresh and floral aromas. In the mouth, however, the taste is full and appropriately acidulous, giving the wine a pleasant freshness that enhances the hints of fruit, and green apple in particular. Excellent as an aperitif, this Ribolla is also perfect with simple starters, fish and white meat.
Casali Maniago is a marvellous estate extending over some 110 hectares, almost entirely planted with vines. And it has belonged to the same family for over 500 years. Certain documents, in fact, attest that on 15 February 1585, following a marriage, the family of the Counts d'Attimis-Maniago received this magnificent piece of land as a dowry. We are in Buttrio, in the province of Udine, 100 km east of Venice, in the Friuli Colli Orientali DOC area. A hilly environment with a strong vocation for viticulture, managed today by Count Alberto, the last descendant of the noble family. On a clear day, from the top of these hills it is possible to see the Adriatic Sea on the horizon, which guarantees a beneficial and constant ventilation to the vines. The Julian Alps behind, on the other hand, shelter them from the cold currents coming from the north, creating a unique environment for growing vines. Today, the estate, which continues to be run according to tradition, also applies the most modern dictates of integrated and sustainable agriculture.
