Imagine the noblest white grape of the Marche deciding to behave like a great red wine. This is how Pao by Casalfarneto was born, a white wine that is not afraid to reveal its darker, more textured side. We are in Serra de’ Conti, in the heart of the province of Ancona. The Casalfarneto estate takes its name from the “Farnetto” oaks that surround the property. Majestic trees that protect a farmhouse now transformed into a “technological farm”. A territory where the tradition of Verdicchio is not a limit but a solid base on which to experiment with new paths. A grape variety capable of incredible longevity, often called the Chablis of Italy for its remarkable minerality, here interpreted in an “Orange” version that reveals an unexpected strength of character. After manual harvesting, the must is not separated from the skins but remains in contact with them for several months. The uniqueness lies in the vessels used: not stainless steel or classic wood, but terracotta and ceramic. These materials allow the wine to breathe without absorbing external aromas, letting every substance contained in the skins pass into the liquid. The result is an authentic and vibrant wine that then ages for another three months in bottle before reaching the glass. Deep golden yellow colour with reflections turning towards bright orange. On the nose it is an explosion of energy: notes of honey and ripe blood orange intertwine with hints of aromatic herbs and a touch of sweet spices. On the palate it is opulent and almost chewable, with a solid structure supported by vibrant salinity that cleanses the palate. The finish is long and dry, with a very light and velvety tannin typical of well-made orange wines. At the table it loves to challenge expectations. Try it with a flavourful fish stew, aged or blue cheeses, or even elaborate white meat dishes.
Casalfarneto is located in the municipality of Serra de’ Conti, in the heart of the Verdicchio dei Castelli di Jesi Classico area. We are about 320 metres above sea level. Today the estate covers about 35 hectares, plus 6 hectares of organically cultivated vineyards. Of these, 28 hectares are planted with Verdicchio. Alongside it are Montepulciano, Sangiovese, Cabernet Sauvignon and Merlot.
