"Colle dei Grillai" Castel del Monte DOC 2018

Colle dei Grillai, Castel del Monte DOC proposed here by the Carpentiere brothers, is the fruit of a careful manual harvest in boxes of Nero di Troia and Merlot grapes. After harvesting, the bunches are quickly brought to the cellar and placed in cold storage waiting to be pressed. This is followed by traditional red vinification, with fermentation in steel tanks activated by indigenous yeasts. An elegant and pleasant red wine, Colle dei Grillai does not mature in wood but is only refined in steel before bottling. Ruby red with violet reflections, this wine has elegant aromas, with hints of blackberry and morello cherry, small red fruits and balsamic and vanilla notes. Pleasantly refined, tannic and structured, this wine offers a well-balanced and persistent sip. Colle dei Grillai is not afraid of the tastiest combinations. It accompanies meat dishes well but also goes perfectly with traditional soups.
