Cantina Merano's Graf line is a fine representation of the nobility of South Tyrolean wine. And this Pinot Bianco, which comes from 30-year-old vineyards between Tirolo, Lagundo, and Cermes at altitudes between 500 and 650 metres above sea level, is a fine example. The finest grapes, cultivated with low yields of no more than 60 quintals per hectare, give this wine an intense and complex character. In the winery, the vinification process is super careful, with alcoholic fermentation taking place in barriques and small oak barrels followed by maturation on the lees for about 5 months, during which the so-called partial malolactic conversion is also carried out. The result is a wine characterised by a beautiful straw yellow colour. The nose is fine and elegant, with hints of apple in clear evidence. In the mouth, however, it enjoys a good sapidity and an elegant and harmonious character. Ideal as an aperitif, it has no difficulty in finding its place at the table. A perfect white wine for the whole meal, it also goes well with fish dishes. For lovers of traditional Tyrolean cuisine, on the other hand, it can also be enjoyed with classic dumplings in broth.
Sometimes a few numbers are enough to understand everything. In the case of Cantina Merano, based in Marlengo, on the hills overlooking the city, the numbers are simple. Between 300 and 900 metres above sea level, the vineyards enjoy perfect exposure and the beneficial temperature range that every wine lover seeks like the Holy Grail. Over 1940 hours of sunshine per year are enjoyed by the vineyards here. There are 16 grape varieties in the vineyards, which produce 60% of the red wines (quality) and 40% of the white wines. Of these varieties, three are indigenous to the region and produce wines with an unmistakable character. The winery produces a total of 1.3 million bottles a year. The secret? Hard manual work, both in the vineyard and in the cellar, to ensure careful and gentle processing of each grape variety. In the cellar, in particular, tradition and innovation are combined with expertise, foresight and care. The philosophy that guides every choice is that of "Less is more", because the character of the grapes must still be recognisable in the glass of wine.
