Champagne L’Immuable 1er Cru Brut by Maison Brisson Lahaye is designed to overcome the natural variations of the seasons and offer remarkable consistency in quality. The estate is located in the village of Tours-sur-Marne, a commune occupying a highly privileged geographical and geological position, where the Vallée de la Marne meets the southern edge of the Montagne de Reims. Today, the family manages small historic vineyard plots rooted in unique limestone soils, with artisan passion and meticulous care. The Premier Cru classification confirms that the grapes come exclusively from Champagne villages with the highest historical ratings for terroir and climate. For this cuvée, the blend consists of 60% Chardonnay and 40% Pinot Noir. The former brings elegance, floral notes and citrus freshness. The latter provides structure, body and a dense aromatic texture. The true distinguishing feature, however, lies in the decision to use no less than 80% reserve wines from older vintages and only 20% wines from the current harvest. This exceptionally high proportion of mature wines ensures stylistic continuity and gives the cuvée uncommon richness. After secondary fermentation in the bottle according to the strict méthode champenoise, the wine rests on its lees for two years before the final dosage. In the glass, it displays a bright straw-yellow colour and a fine, elegant stream of bubbles that rises continuously, forming a persistent ring of mousse on the surface. On the nose, it reveals a refined, fresh and floral aroma, enriched by intriguing notes of pastry and fragrant bread crust. On the palate, lightly honeyed notes of white flowers immediately return. The sip is fresh, direct and supported by pleasant persistence, immediately inviting another taste. At the table, it knows exactly what it is doing and shows excellent versatility. Try it with a classic mixed fried fish platter, where the bubbles cleanse the palate perfectly of the richness of the frying. It also works beautifully with fish-based first courses or fresh soft cheeses.

And this is precisely where the remarkable Champagne Brisson-Lahaye belongs. The story of this estate is, first and foremost, the story of a transformation driven by passion. It all began in Tours-sur-Marne, one of the very few villages historically classified as Grand Cru. Here, the Brisson family originally ran a traditional farm devoted to agriculture and livestock breeding. The turning point came in 1981 with the marriage of Eliane Brisson and Joël Lahaye, the latter the son of winegrowers. Combining their strengths and visions, the couple decided in the 1990s to place all their faith in the vine, expanding their vineyard holdings. In 1994, they took the decisive step: they left the local cooperative to become independent. Today, the baton has passed to their daughter Laure, who, after rigorous studies in viticulture and oenology, runs the estate together with her partner Matthieu Foissy, representing the third generation of a family of independent winegrowers. Despite its outstanding reputation, Brisson-Lahaye retains the scale and spirit of a small artisan estate, with just 4 hectares of vineyards. Yet it is precisely this small size that represents its greatest strength. The vineyard philosophy is guided by a profound respect for biodiversity and natural balance, with the aim of allowing the terroir to express itself as purely and transparently as possible.
