Alain Vesselle is a small Propriétaire Récoltant, one of those who make the Champagne region great. His work is hard and never ending. In this case, the Brut Tradition proposed here comes from a blend of Pinot Noir grapes, 80%, with Chardonnay for the remainder. All the grapes come from vineyards classified as Grand Cru, in the commune of Bouzy. After harvesting, the grapes are put into the press without being destemmed and sent to the fermentation phase. Then, before bottling and the subsequent frothing phase, the base wines undergo malolactic conversion to make them more elegant and complex. Only then does the creation of the cuvée and the bottling take place. The result is a Champagne NV, i.e. without indication of the vintage, characterized by a beautiful intense yellow colour with golden hues. The nose reveals a powerful wine, with notes of small red fruits in good evidence and the classic memory of bread crust and cream. Lastly, the mouthfeel of this Brut Tradition is full and generous. A structured and fine Champagne that requires a level pairing. Excellent with foie gras, it goes well with savoury meat and fish dishes.
