As in the case of this "Yellow Label Ice Jacket" Champagne, a particular Cuvée celebrating the 250-year history of the Maison. In this case, the bottle is presented with a special "jacket" made of sustainable material. This cover is not only a tasteful aesthetic choice but also keeps the wine cool. As for the wine, then, it is a "non-vintage" and traditional Cuvée, made from the three most widely grown grapes in Champagne. Traditionally, the proportions of the different varieties include 50 to 55 percent Pinot Noir, 15 to 20 percent Meunier, and 28 to 33 percent Chardonnay. The grapes, specifically, come from more than 50 different plots, among the best on the property. The second, long, bottle fermentation takes place in the ancient "quarries" dug into the chalky subsoil of Reims and continues for about 30 months. Golden yellow in color with fine bubbles, the nose reveals hints of peach, Mirabelle plum and pear. In addition, vanilla and toasted hints reminiscent of brioche. Strength and silkiness, in perfect balance, with aromatic intensity and great freshness. A very classy champagne, it is great right from the aperitif. At the table it accompanies a seafood menu throughout the meal.
