  • Sensations Straw yellow colour. Delicate bouquet of white flowers blending with notes of citrus and Mediterranean scrub. In the mouth the hints of thyme and rosemary confirm a sensation of elegance, freshness and persistent minerality.
  • Vinification The destemmed grapes are kept in contact with the skins for a few hours at a cold temperature before pressing, in order to extract the maximum aromatic potential from the skins. Fermentation takes place in stainless steel at 15°C for 13-15 days, preserving the grapes' natural bouquet and aromatic profile.

  • Puglia surprises. Always. In this case it does so thanks to the freshness and immediacy of this pure Vermentino-based white wine from Cantina San Marzano. Thyme, as it is called, is a white wine that expresses the essence of the Mediterranean maquis. Fragrant and spontaneous plants that grow luxuriantly on the sand dunes of the Apulian coast. Matured in steel for 5 months, Timo is a fresh wine that loves seafood. Straw yellow in colour, the nose reveals a delicate scent of white flowers which blends with citrus and Mediterranean scrub notes. In the mouth it reveals hints of thyme and rosemary, with a pleasant and distinct saline note. A wine characterised by elegance, freshness and persistence.

    San Marzano is a small town in the centre of the Primitivo di Manduria PDO. A strip of land between the seas that wash Apulia. It was here that 19 vine-dressers founded Cantine San Marzano. Long before the denomination of origin was created and the Primitivo di Manduria was recognised throughout the world. That was in 1962. However, it was not until 1996 that the first branded bottles were produced, triggering the transition from an economy based on bulk wine to the creation of a direct relationship with the end consumer. Today, San Marzano is a fine entrepreneurial reality, firmly rooted in respect for an ancient tradition, with an eye to the future.
