Violante, Castel del Monte DOC, is a wine designed to enhance, with a young and fresh style, the elegance of the Nero di Troia grape variety. A typical varietal of the Apulia region which has among its most common descriptors the scent of violets. It is the result of a careful vinification of pure grapes. Harvested in the second ten days of October, the grapes are vinified with a brief maceration of the skins at a low temperature. The wine thus obtained is left to refine in vitrified cement tanks, with micro-oxygenation, for about 12 months. It then completes its ageing phase with at least another 3 months in the bottle. The result is a wine of great pleasantness, characterised by a clear violet-red colour and an intense and fresh bouquet where, in addition to small red fruits, it is easy to distinguish the typical violet. In the mouth it is juicy and full, with an excellent balance between fruit and structure. Served at the right temperature, between 16 and 18 degrees, it is a satisfying accompaniment to pasta dishes with tasty sauces and meats.
