You know those scents that immediately make you think of sunshine? Le Sorbole, Falanghina di Vinosia is just like that: a white wine that puts you in a good mood from the very first sip. Because its freshness is not just a question of temperature: it is a true expression of the territory from which it comes. We are in Paternopoli, the green heart of Irpinia, a hilly area in southern Campania that never ceases to surprise those looking for white wines with character. Here, the altitude is around 500 metres above sea level, and there is a marked difference between day and night temperatures. This is ideal for developing intense aromas and maintaining natural freshness. The soils, rich in clay and volcanic ash, help retain water and give a mineral boost that is clearly evident in the glass. Falanghina is one of the oldest grape varieties in southern Italy. It was already cultivated in Roman times and, after a period of neglect in the 20th century, it is now back at the forefront of Campania's new viticulture. Falanghina is a single-varietal wine. After careful harvesting, the grapes are gently pressed and left to macerate for about 12 hours at a low temperature, between 8 and 10 degrees, to extract delicate but intense aromas. This is followed by pressing, clarification and fermentation at a controlled temperature with selected yeasts. Everything takes place in steel, to preserve maximum freshness and aromatic components. In the glass, it has a bright straw yellow colour. The nose is an explosion of white flowers, pineapple, lime and a hint of sage. On the palate, it is smooth and vibrant: the acidity keeps the attention high, and the structure is lean but present. The finish offers a savoury note that immediately invites another sip. Try it with fish and shellfish, or with well-chilled buffalo mozzarella: a combination from Campania that works wonderfully well.
