  • In spite of the name, which might make one think of a bubble, in this case the term Cuvée is used to simply indicate a blend of different wines. Coldirus Palladium, in fact, comes from a blend of Lagrein and Cabernet, in equal parts, to which 20% of Merlot grapes are added. After manual harvesting and careful vinification in the family's modern winery, this wine is matured in small French oak barrels, or barriques, in the perfect style of the great reds of Bordeaux. After all, this is one of the most representative wines of the Alto Adige winery, which in this case reaches peaks of absolute excellence. If the style is French, in fact, the character is undoubtedly that of an elegant mountain wine, characterized by ample and generous aromas that recall fresh and still crunchy fruit. In the glass it is a beautiful intense ruby red colour with reflections that turn to garnet. On the nose, a rich and intriguing bouquet, reminiscent of red and black fruit, with a hint of violet and a pleasantly balsamic undertone. In the mouth it is full and velvety. The previously perceived fruit notes return, to which sensations of spices and tobacco are also added, due to the passage in wood. A wine suitable for robust meat dishes. A bottle to keep in the cellar waiting for the right occasion and that, stored in the right conditions, can easily age for up to 10 years.

Today things have changed a lot, obviously for the better. The cellar is modern and equipped with all the necessary technologies. But the passion for things well done certainly hasn't changed.
