They are the fashion of the moment. Èthos belongs to the group of naturally disease-resistant vines that are the result of years of study, research and cross-fertilisation between the European vine, Tocai and Sauvignon, and the American vine. The advantage of these grapes is that they do not require any treatment, thus allowing a more sustainable and nature-friendly agriculture. Forchir grows it in its vineyards in Rivalon di Ponte, Codroipo, in the province of Udine. After harvesting, the perfectly ripe bunches of grapes are taken to the winery and vinified in a soft way, with no added sulphites. At the end of vinification, the wine rests for a few months in steel tanks "sur lie", that is in contact with its own noble lees. A wine characterised by a beautiful straw-yellow colour with greenish reflections, it reveals fruity aromas of apple and pear on the nose. In the mouth, however, it is super pleasant, thanks to a fresh, savoury note. To experience this interesting novelty, the suggestion is to combine it with tuna tartare or scampi. For lovers of vegetarian cuisine, chickpea falafel is a real treat.
