It is called Florimonte and is one of the good wines offered by the Fiorotto winery. Prosecco DOC, it is here proposed in its most classic version, namely Extra Dry. Grapes come from the municipality of Nervesa della Battaglia, in the province of Treviso. 85% Glera and 15% Chardonnay, to give softness and complexity to the final Cuvée. The harvest, carried out strictly by hand, takes place in September. The carefully selected grapes are soft-pressed and the must obtained is left to decant until complete clarification. This is followed by the delicate sparkling phase, using the Charmat (or Martinotti) Method in autoclaves and a subsequent bottle-ageing phase lasting 30 to 90 days. What is obtained is a delicate sparkling wine characterised by a beautiful golden yellow colour. The nose is slightly fruity, with hints of white-fleshed peach and vanilla. In the mouth, on the other hand, it is amiable, well balanced and particularly persistent. A perfect bubbly as an aperitif but which can also accompany a complete meal. Especially recommended with white meats and fish. It goes well with fried fish and shellfish.
It is hard to imagine a company that better represents the concept of family. We are talking about Fiorotto Wines, founded by Vittorio Fiorotto after arriving in Nervesa Della Battaglia in the 1930s with his wife and children. Initially, the company had about ten head of cattle, a few rows of vines, cereal and grassland fields. Since then, four generations of the family have followed. Today, it is siblings Daniele, Marina and Stefano Fiorotto who share the many responsibilities. Between the various properties and the numerous plots of land, the estate currently extends over 120 hectares, of which about 20 are dedicated to vineyards alone. Rows of Chardonnay, Glera, Pinot Noir and Merlot from which the good Fiorotto wines are obtained. Strict quality standards are followed in the vineyard. In fact, the company is SQNPI certified (Sistema di Qualità Nazionale Produzione Integrata). But that is not enough. Between the rows of vines, as evidence of the good natural habitat, there are hives with bees.
