"Le Cicale" Rosato Toscana IGT 2020 - Fattoria Sardi

Rosé is in fashion. At least that is what the experts in the sector say, and they are ready to bet that it will be the most popular wine in the coming years. For its versatility, no doubt. But above all for the fact that, thanks to increasingly refined production techniques, today it is possible to discover rosés of great value, made in different styles that are never banal. Like this Le Cicale, which is made from organic grapes, Syrah and Vermentino. Harvested by hand, in the cellar the varieties undergo a maceration phase that can be longer or shorter depending on the vintage, directly in a pneumatic press. Fermentation is then activated spontaneously, through the addition of pied de cuve, and is carried out in wood, like the subsequent maturation, on fine lees. Pale pink, with hints of onion skin, the nose reveals a refreshing, complex and intense perfume. Floral notes of wild roses and white flowers, and fruity notes of raspberries and citrus fruits. In the mouth, it is above all fresh, but also full, savoury and well-balanced, with a persistent, savoury and silky finish. Thanks to its good balance of freshness, creaminess and minerality, Le Cicale is ideal with fish and shellfish dishes, but is also well suited to accompany white meats and cheeses.

Fattoria Sardi is located in central Italy, in north-west Tuscany, and more precisely in the countryside nestled between the Apuan Alps, the Apennines and the Tyrrhenian Sea. We are only 5 kilometres from the walls of the city of Lucca. The company's estates are developed between two rivers, the Freddana and the Serchio, with different soils depending on altitude and correct exposures towards the south-east, south-west. The proximity to the sea ensures plenty of light and constant ventilation, while the mountains guarantee a good water supply and a beneficial temperature range between day and night, especially in summer. 20 hectares of specialised vineyards, conducted with full respect for nature and its rhythms. An organic farm, it also makes use of the tools of biodynamic agriculture. This gives rise to natural wines, obtained without the use of exogenous products. Good and territorial products, therefore. But also wines that respect nature and are healthy for consumers.
