Chardonnay "dei Sassi Cavi" DOC Collio 2020 - Eugenio Collavini Viticoltori

From pure Chardonnay grapes. This is the Sassi Cavi, DOC Collio, proposed by Collavini. Vineyards in the area of San Floriano del Collio, Cormôns and Gorizia, the grapes are harvested when fully ripe, when aromas and perfumes are perfectly developed and the berries are rich in sugars and acidity. Harvesting begins in September and the carefully selected grapes are quickly brought to the cellar for processing. We start with a maceration of the must on the skins, at 12 degrees, for about 12-16 hours. This is followed by fermentation, again in steel at a controlled temperature, and an ageing phase that is prolonged until complete maturation is achieved. Slightly straw yellow in colour, this wine has fresh aromas. Above all floral, with hints of mugwort and exotic fruit. In the mouth it is fresh, aromatic and well balanced. It is a marvellous aperitif wine, but also suitable for elegant fish dishes.

Collavini is a historic, family-run company in Friuli. But at the same time with an international and innovative spirit. We are located in Corno di Rosazzo, among the hills of the Collio and Colli Orientali del Friuli DOC areas. Here Collavini offers a wide range of wines, both sparkling and still, made from native and international grape varieties. Although the variety that most represents the company is undoubtedly Ribolla Gialla. After all, it was back in 1979 that Collavini, thanks to the happy intuition of its founder Manlio (Collavini), started offering it in an interesting sparkling version. And to do so, after years of experimentation, an original sparkling wine-making method was developed that combined the Martinotti-Charmat method with times and techniques reserved for the Metodo Classico. This is the "Metodo Collavini". Today the company can count on a vineyard area of about 170 hectares, from which it produces about one and a half million bottles. And of these, 200,000 are still made from Ribolla Gialla.
