Château Haut Gravet, Saint-Émilion Grand Cru proposed here by Domaines Alain Aubert is a wine produced according to the Bordeaux blending technique, i.e. with the blending of grape varieties typical of the Bordeaux wine region. In this case, in particular, the blend consists of 70% Merlot, 20% Cabernet Franc and 10% Cabernet Sauvignon. The vinification process begins with manual harvesting, followed by the complete destemming of the grapes and alcoholic fermentation in temperature-controlled stainless steel vats. During fermentation, repeated punching-down is carried out to extract the right amount of tannins and other substances from the grape skins. After fermentation, the wine is matured in oak barrels, 50% of which are new, for a period of approximately 18-24 months. This allows the wine to develop complexity and structure. The end result is a wine with an intense ruby red colour. The nose is fruity and full-bodied, with a perfect balance of aromas and tannic structure. Thanks to its structure and body, this wine goes well with important dishes such as roasts, stews and mature cheeses.
