Moden Blanc Brut is an innovative wine, produced with a great local grape variety. The Pignoletto, fruity and intense by nature, in the Cleto Chiarli cellars becomes a pleasant and easy to drink wine. A sparkling wine that leaves a good memory of itself, from the first taste. The grapes, brought to the cellar at a perfect degree of ripeness, are processed in a soft way, only partially destemmed. Fermentation at a controlled temperature, thanks to the addition of selected yeasts, for the sparkling phase the wine is put into an autoclave where it is re-fermented at a low temperature. Pale straw yellow in colour, it is a slightly aromatic and fruity wine. As soon as it is poured, it is covered with a soft and abundant froth, fuelled by a fine and persistent perlage. In the mouth it reveals a delicate flavour, with clear hints of fresh fruit. It is the wine to experiment with for an unusual aperitif, when we want to surprise our friends with a label that is not quite so common. On the table it goes well with both starters and main courses of white meat or fish.
