It is called Origance and it is a vintage Champagne, in this case vintage 2012, proposed by Maison Cheurlin Dangin. An extraordinary wine, capable of offering a surprising sensory experience. Specifically, it is a Brut, produced from 100% Chardonnay grapes, which rests for a long period on the lees in the bottle. Maturation, in fact, in this case lasts at least three years, contributing to the richness and complexity of Champagne. During this period, in fact, the wine undergoes a series of transformations that give it its characteristic aromas and flavours. In the Origance glass, it is a beautiful golden yellow, crystal clear with a fine and persistent perlage. On the nose, it offers a rich and complex bouquet, reminiscent of exotic fruit, orange blossom, beeswax, butter and yeasts. In the mouth, however, it is well balanced, with a long finish of exotic fruit and yeast. A wine of great pleasantness and typicality, this Champagne Origance 2012 seems made to be paired with delicate shellfish. The wine's freshness and savouriness also go well with oysters. Try it also with steamed king prawns or a fresh salmon tartare. Perfect for special occasions, to be uncorked strictly in the company of friends and family.

Celles-sur-Ource is a village belonging to the Aube department. We are in Champagne, of course, where families of winegrowers have been working their plots with care and passion for hundreds of years. This is also the case of the Cheurlin-Dangin maison. Ten generations of the Cheurlin-Dangin family cultivate the traditional varieties of the region, Pinot Noir, Meunier and Chardonnay. The company was founded in 1757 and since then little has changed in the way of vineyard and cellar management. After all, their results are there to see. For over two centuries, year after year, simply extraordinary Champagnes.

  • Sensations To the eye it is a beautiful golden yellow, crystal clear with a fine and persistent perlage. The olfactory bouquet is precious, with hints of exotic fruit and orange blossoms that are followed by hints of beeswax and butter, then completed by the unfailing references typical of the classic method, linked to bread crust and yeasts. The sip is consistent with the nose, balanced and layered, long and elaborate in the aftertaste.
  • Vinification It rests for a long period on the lees in the bottle, as is compulsory for all bubbles produced according to the Champenoise method, and tells its own story with a refined and important sip. Cheurlin-Dangin's Champagne Brut Millesimato is a bubble not like any other, but refined and chiselled in all its nuances. With seafood cuisine and shellfish in particular, it is a Champagne that will blow you away. Choose it in combination with linguine with mantis shrimp, and you will have met the couple of the century. Try it to believe.
