Chateau de Fleys, an interesting family business in Burgundy, offers this Chablis 1er Cru Les Fourneaux. The 1er Cru indication clearly tells us that this is a wine made only from grapes harvested in classified vineyards with perfect exposures, where the grapes ripen perfectly, resulting in superior wines. 100% Chardonnay, like any Chablis, the vineyards in this case are located about 250 meters above sea level. Mature plants, with an average age of about 50 years, taking root in soils of a calcareous nature (Portlandian and kimmeridgian), ideal for maturing Chardonnay. Harvested by hand, vinification is super thorough, with temperature-controlled fermentation and maturation of about 10 months in stainless steel vats. Golden yellow in color with greenish reflections, the nose reveals great aromatic intensity, combining notes of fruit, such as peach, and white flowers with hints of almond. Finally, in the mouth, it is balanced and enveloping. Fresh but pleasantly fat, again the fresh fruit notes return, accompanied in this case by obvious hints of honey. The finish is long and supported by beautiful minerality. The signature of all great Chablis.
The history of the Château de Fleys winery began in the late 19th century when Julien Philippon bought some vines for wine production, land and timber with which he built the estate that has since been handed down from father to son. At that time, the site of the winery was a hunting lodge belonging to the Lord of Pathenay (squire of Louis XIV). In 1988, the Château de Fleys and its 1-hectare "Clos" were purchased by André Philippon, Julien Philippon's grandson. Today the Domaine is managed by the Philippon family. The farm is located in the town of Fleys, in the heart of the Chablis production area 4.5 km east of the town of the same name, on the right bank of the Serein River. Today the estate covers a total of 20 hectares and is owned by the latest generation of the Philippon family consisting of Beatrice, Benoit and Olivier. An extremely important terroir, 6 different plots express the character and identity of Chablis wines, including 3 1er Cru plots. Careful work in the vineyard, excellent terroir for individual plots, and different winemaking to maintain and bring out the elegance and typical characters of the area, offer products of considerable interest. Vineyard work and winemaking are carried out with respect for nature. The winery was rebuilt and renovated in 2006, heavy investments were made on equipment and technology aimed at maximizing the quality of the wines.
