Don't be fooled by its size, because Cavit, or rather Cantina Viticoltori del Trentino, is one of the largest wineries in Italy (and perhaps the world) but the quality of its wines is absolute and certified. Cavit, for the more punctilious, is not just a cooperative but actually a cooperative of cooperatives, which unites and markets the wines of ten Trentino cooperative wineries, with around 4,500 associated winegrowers and over 5,500 hectares of vineyards. A sea of vines from which, every year, an ocean of wine is produced. Cavit, however, collects, examines and selects the raw materials produced by its member wineries, following each stage with care: from refining to bottling. This is why today Cavit is considered almost synonymous with modern Trentino winemaking. It is no coincidence that it collaborates with the renowned Istituto Agrario di San Michele all'Adige (Fondazione Edmund Mach), which trains the most qualified technicians in the world, and with other national oenological research centres.
