The name Cervara derives from the fact that in the woods surrounding the farm, in the past, it was not uncommon to find deer grazing peacefully. Cavit has chosen it to produce its most representative Teroldego. It should be noted that this is a reserve, that is, a wine that undergoes a long period of ageing in wood before being bottled. In the case of Maso Cervara, the maturation in wood lasts for at least 15 months. In the glass it has a beautiful deep and intense ruby red colour. There are also some violet nuances that, in spite of the maturation in wood, make us think of a fresh and vital wine. The nose is intense, with notes of violets and ripe red berries. In the mouth it is pleasantly rich, certainly full-bodied, but always with a great balance between all its components. Try it with the tasty cheeses from the alpine pastures at high altitude and with the good traditional cold cuts of the region. It certainly won't make us regret the purchase.
Don't be fooled by its size, because Cavit, or rather Cantina Viticoltori del Trentino, is one of the largest wineries in Italy (and perhaps the world) but the quality of its wines is absolute and certified. This is why today Cavit is considered almost synonymous with modern Trentino winemaking. It is no coincidence that it collaborates with the renowned Istituto Agrario di San Michele all'Adige (Fondazione Edmund Mach), which trains the most qualified technicians in the world, and with other national oenological research centres.
