Come d'Incanto... Here is the right wine for us! Just what we were looking for to accompany our evening with friends, with a dinner based entirely on fish, with roast octopus and potatoes to remind us of summer evenings. Come d'Incanto comes from Puglia, from Corato to be precise. It comes from a special vinification of pure Nero di Troia grapes, for once processed in white, therefore without any contact with the skins. The grapes, having reached perfect ripeness, are harvested by hand, selecting only the best bunches in the vineyard. Then, to start the fermentation phase, only autochthonous yeasts are used, i.e. naturally present on the grapes. Vinification in stainless steel, at low temperature, to best preserve the delicate aromas of the noble southern grape variety. Straw yellow, its colour, in the glass this white wine reveals an enchanting aromatic richness that ranges from citrus notes to those of wild blackberry, from hints of quince to those of icing sugar, with distinct sensations of honey. Fleshy and mineral, this wine has only one flaw. One bottle is never enough. It is better to prevent this problem by always leaving at least one bottle in the fridge just in case.
