  • Vinification It differs from our normal Barbera, not only in its alcohol content, but also in its production concept. In fact, Barbera Superiore is a selection of the greatest Barbera grapes. Fermentation of about 15 days at low temperatures, 24-28 ºC, after a light pressing and refinement in large Slavonian oak barrels for 10 months at a natural temperature of 18 ºC, finally a refinement of about 3 months in the bottle.

    "Bompè" Barbera Langhe DOC 2021
  • From the area historically best suited for the production of Barbera, in the highest hills of Alba. This is a particularly favourable area: here our plot called 'Bompè' gets the sun from morning to evening, in a very wide hilly strip of 9 hectares. After manual harvesting of our grapes in this historic vineyard, spontaneous fermentation takes place in cement vats for about 10 days at a temperature between 22 and 28 °C. This is followed by ageing in large, lightly toasted French oak barrels for one year. Ruby red colour with violet hues. Concentration of red berry fruits and berries. Important smoky notes. In the mouth marked salinity due to the white rock present here. A Barbera characterised by great clarity and verticality.

    Any time is the right time to drink Barolo. And if the people at Borgogno say so, they are certainly to be believed. After all, this is the most historic cellar in Barolo, dating back to 1761. Even today, the underground cellars represent a rare historical memory of the Langa, where the wines are produced according to tradition, with long spontaneous fermentation without the use of selected yeasts in cement tanks, and above all with long aging strictly in large Slavonian oak barrels. Borgogno cultivates its vineyards in Barolo, Madonna di Como, and in the Colli Tortonesi. With full respect for the land. No chemical fertilisers or herbicides. Only sustainable treatments and, from 2019, certified organic. Today, Borgogno continues to be an expression of a territory, tradition and history. Always, however, with an eye to the future.
