  • Who said bubbly has to come only from northern Italy? If that was once the origin of the best products, today things have changed and it is possible to find, even in Puglia, as in this case, a bubbly worthy of note. Notte Rossa, an Extra Dry sparkling wine, comes from a processing of mostly Chardonnay grapes, with small percentages of other indigenous varieties. The grapes, harvested when acidity is still predominant, are softly pressed. The first fraction of flower must is fermented at a low temperature, resulting in a fresh, sincere base wine. Subsequently, this base is racked into an autoclave for the frothing phase. This lasts approximately one month, a period during which the wine remains in contact with its own yeasts. Brilliant straw yellow in color with greenish highlights, the perlage is fine and persistent. The nose reveals an intense and fragrant bubble, with fine floral, yellow-fleshed and exotic fruit notes. All combined with hints of Mediterranean scrub. In the mouth it is harmonious and elegant. Pleasantly soft, lively and fresh. To be uncorked at aperitif time. It is the valid alternative to the "usual" Prosecco. Must try!

    In the heart of Salento, land of great wines, and more precisely in the locality of San Marzano is located the Notte Rossa winery. Here the vineyards are those of Primitivo di Manduria from which are obtained wines of great personality. The winery vineyards are located in the most vocated areas of the Salento peninsula. Hectares of vineyards, mainly with native grapes, arranged in different plots that enjoy different exposures and soils. From the hilly and tendentially clayey areas of northern Taranto, that is, in upper Salento, about 150 meters above sea level, come the white grapes. For the reds, such as Primitivo and Negroamaro, the choice falls on plots in the agri located further south, areas of red earth, limestone and sand, where the old sapling plants have coexisted for decades with the shrubs of the Mediterranean scrub.
