Gabutti, the Barolo DOCG offered here by Sordo, is a wine that can be defined as constantly evolving. A good bottle to uncork today, but one that can age quietly for several decades in the cellar. Patience, when dealing with wines like these, is never too much. Long maceration with submerged cap, malolactic fermentation and 24 months of aging in large capacity Slavonian oak barrels, followed by 4 to 6 months in steel tanks and a minimum of 6 months in the bottle, are the fundamental steps followed in the production of this wine. The result is a goblet of garnet red color, intense and deep but above all still very lively. On the nose it reveals an austere, noble, important, broad and persistent bouquet. Robust but never intrusive sensations of wood, ripe fruit and fragrance of flowers. Then a very slight presence of resin, sweet spices and peach leaves. On the palate, it is rich and opulent. The aromas and sensations perceived on the nose are confirmed, with great structure and balance. Pleasant and with a particularly long persistence. It is not surprising to discover that this bottle has won awards several times by international wine critics.
The Azienda Agricola Sordo Giovanni is one of the many beautiful family businesses in Piedmont.
